The Quinoa + Arugula Salad (610 calories) features the quinoa, which is known for its high protein content. The Fire-Roasted Chili Relleno (380 calories), a deep-fried Mexican dish, is lightened up with a fire-roasted cooking technique that adds a smoky flavor.

The Shrimp Scampi Zucchini Fettuccine (550 calories) offers a low-carb option by replacing 80% of the traditional fettuccine noodles with zucchini ribbons.

The Grilled Chicken Chimichurri (550 calories) highlights a traditional Argentinean condiment with mildly spicy notes. The Cedar Plank Salmon (640 calories), served with a side of white corn and spinach succotash, features omega-rich salmon, roasted on a cedar plank to infuse the filet with a smoky flavor without using butter or oil.
