Ultimate Baker claims that the FDA approved xylitol sugar substitute does not spike blood sugar level or insulin as it has a very low glycemic index.
 
The naturally occurring polyalcohol xylitol is found in most plants, fruits and vegetables, and is almost indistinguishable from sugar with 40% fewer calories.
 
Ultimate Baker new product development vice-president Sue-Ellen Cutler said: “Our goal is to create high-quality products that are both visually appealing while free of the harmful synthetics and preservatives, which are dominant across the baking industry.

Despite being technically classified as a carbohydrate, xylitol is a low-carb substance as it creates minimal impact on blood sugar levels.

Centers for Disease Control and Prevention (CDC) estimates that in the US more than 100 million people live with diabetes or prediabetes, so the development of safe, natural cake decorating alternatives is considered important.
