Handcrafted by master chef Bill Marchetti, the new menu presents a much wider choice of new pizzas, pastas, risottos, soups, desserts and antipastis. Through the use of authentic and fresh ingredients such as carnaroli rice (fine long-grained Italian rice), rucola leaves, Tuscan black cabbage, zatar (lavender), dishes of this new avatar are turbo-charged with flavour, for the Indian palate. Juicy HACCAP-certified US farm pork ribs are a special draw for meat lovers.
The choices include earthy, walnut and smoked cheese casoncelli ai noci, pansotti stuffed with mushrooms and cheesy ravioli. A wide variety of mushrooms such as pink oyster, shiitake, shimeji, King, and Swiss brown have also been included to a growing list of varieties now available on the menu. Pastas will be available in varieties of long and short pasta and hand-crafted filled pasta. Other dishes include Rigatoni with Braised Lamb, Farfalle with Paprika cream, Angel hair pasta and Spaghetti with sautéed beef.
The gueridon (live food trolley) gives foodies an opportunity to interact with chefs as they rustle up select delicacies from the menu, and customise them to preferences. Other attractions include offering of a wine trolley and chefs cooking at one's table Italian delicacies such as Flamed summer berries, Neapolitan ice cream bombs and Sicilian ice cream cassatta.
