The company noted that its eggplants - the traditional purple, teardrop-shaped variety, are sourced from JS Petranglo Farms in Vineland, New Jersey.

Sweetgreen's September salad features diced roasted eggplant with mesclun greens, sliced tomatoes, chopped peppers, basil and parmesan cheese, drizzled with a lemon hummus vinaigrette.

One cup of cubed eggplant has just 20 calories, about 3g of fiber, and 5% of the daily doses of both potassium and folate, the company said.

Sweetgreen offers salads and organic frozen yogurt with seasonal toppings. The company has 13 current, open locations in the Washington, DC-metro and Philadelphia areas.
