Thomas Mathers Distillery is set to open in the town of Delavan, Illinois, in spring 2013.
To set up the facility, the company completely renovated an old bank building and installed a Kothe-brand still that was imported from Eisingen, Germany. The distillery will use the still to produce vodka, gin and rye whiskey.
Thomas Mathers Distillery owner Tom Mathers said a single batch of vodka, rye or gin can be made in around five days but requires two years of aging to come up with a quality product.
Apart from the distillery, the Mathers family also owns the Harvest Café and Hometown Wine and Spirits in the Delavan area. The family further plans to open a bar and an art gallery in the region.
