Researchers at the University of Colima, Mexico will make banana juice, a food that lowers levels of cholesterol and triglycerides despite its high concentration of sugar. The formula, said Vrani Ibarra Junquera, Bioengineering Laboratory researcher at the university, is to transform the excess calories in fibers called prebiotics.
This project, funded by CONACYT aims to take advantage of all the nutrients in banana pulp. "The banana juice is very nutritious because it has antioxidants, vitamins, minerals such as potassium and magnesium, and it is low on sodium, allowing active transport into the muscle cells. However, its disadvantage are the high levels sugar, so we want to lower the calories and transform them into something healthy," he said.
