Canadian seafood supplier Sablefish Canada has announced it is bringing Kyuquot Sound black cod to Europe, capitalizing on the growing popularity of the fish usually available only in Japan.
The company will be delivering the fish to restaurants and high-end retail, according to a statement from Sablefish.
"As the only commercial farmer of Black Cod in the world, we feel we are best placed to introduce this product to the European market," said Paul Simpson, Sablefish's marketing manager. "This is a far superior fish when compared to the defrosted wild-caught Black Cod that Europe has received over the years and our project finally addresses the sustainability issues of the wild stock of this fish."
The fish, known in North America as sablefish, is already available in Switzerland through the major department store chain Manor, as well as in Michelin star-rated restaurants in North America and Hong Kong.
Sablefish farms the fish in Kyoquot Sound, northwest of Vancouver Island, Canada. They are fed with an organic diet, and harvested using a traditional Japanese system that eliminates tissue damage caused by chemicals.
