Sensient Flavours develops solutions to reduce fat and sugar in ice creams

Food ingredients manufacturer Sensient Flavours has developed two solutions to reduce fat and sugar in ice creams.

The solutions include All-Purpose Sweet Solutions (APSS) and DairyBoost, which help manufacturers cater to growing consumer demand for 'better-for-you' options in the premium ice cream segment, reported Agra-net.com.

These are Halal and Kosher certified, natural and include organic versions.

Botanical extracts, which were taken using advanced technology, are primary ingredients in both products, which intend to reduce calories while retaining the rich flavour and creamy feel of an ice cream.

Sensient Flavours European marketing director Simon Daw was quoted FoodIngredientsFirst saying: "Ice cream is an indulgent category and will never be as healthy food as fruit and vegetables.

"However using our technology and solutions we are able to provide healthier options.

"The added bonus is that the brand and products do not compromise the required 'taste of indulgence'.

Usually when low calorie products are developed, the sugar feel is lost but APSS has been able to address this issue. Stevia is used as a zero-calorie sweetener option in ice creams, but leaves an unwanted aftertaste.

DairyBoost offers a rich mouthfeel and helps retain the characteristics of full fat dairy products. This range comes in different flavours, including cream, coconut, condensed milk, dulce de leche, fresh milk and yoghurt.
