"Vacuum cooling machinery quickly pre-cools, which helps to preserve the original color and flavor of mushrooms. It also lowers the cost price of transport and extends the shelf-life of mushrooms. The only drawback of vacuum cooling is the gradual loss of moisture."

"Much of the mushrooms' moisture evaporates during the vacuum cooling process. When more than 5% of the moisture evaporates, then there is certainly an influence on the product quality of the mushrooms. This in turn leads to commercial losses. We therefore installed a spray system in our vacuum cooling machinery to prevent too much loss of moisture and to increase product quality."
