Toffee strawberries

Ingredients

• Equipment
• You'll need 20 small cocktail skewers
• Ingredients
• 20 strawberries
• 1 cup caster sugar

Method

1. Insert 1 skewer into hull of each strawberry. Place strawberries, in a single layer, on a heatproof tray lined with baking paper.

2. Combine caster sugar and 1/2 cup hot water in a heavy-based saucepan over low heat. Cook, stirring, for 3 minutes or until sugar is dissolved. Increase heat to high. Bring to the boil. Boil, without stirring, for 8 minutes or until mixture turns golden. Set aside for 30 seconds for bubbles to subside.

3. Carefully dip 1 strawberry into hot toffee. Place on tray. Repeat with remaining strawberries and toffee mixture. Stand strawberries at room temperature for 15 minutes or until toffee is set and cooled. Serve.
