Mr Knapp has been with the company since 2009 and is said to be leaving to pursue another job opportunity that is not yet known.
Patties Foods say they will now begin looking for a new CFO but Mr Knapp will stay with them until whoever is appointed until the transition takes place.
Mr Knapp worked with food manufacturer Unibic Pty Ltd as a CFO before his time with Patties Foods.
Patties Foods CEO and Managing Director, Steven Chaur, released a statement thanking Mr Knapp for his contributions to the company, noting also his important role in late 2013.
Patties recently announced that it had been able to quantify the financial impact of the recent food recall of some of its berry products on its annual profits.
