On the 10th of October, on the sunlit fields across several counties in Xinjiang province, pepper farmers are in the process of drying the hot peppers after the recent harvest. When the peppers have dried, the farmers can select the best ones and put them in bags. "The hot pepper town", Bohu county in Xinjiang province, has always had a bumper harvest in late autumn. Fiery red peppers cover the drying fields as far as the eye can see. It is a dazzling sight.
