Innophos sodium reduction ingredient hits Canada

Core Tip: US head-quartered ingredients firm, Innophos, will launch its calcium-based chemical leavening agent in Canada, set to assist manufacturers in reducing sodium content in baked goods.
Its Cal-Rise ingredient received regulatory approval from Health Canada, opening the product up to Canadian markets for use in food products.

Birkin Weith, business manager of leavening products at Innophos, welcomed the approval in Canada.

“With Cal-Rise, we are able to offer an excellent solution for baked good producers to economically reduce sodium content without affecting the consumer’s perception of taste,”
 Weith said.

The ingredient was commercialised in over 20 new products in 2011 across the US, Europe and Asia Pacific markets in baking powders, pancakes, waffles, cake mixes, tortillas and crackers.
