Pureé with fruit foraged from Latvian forests

Core Tip: Two new products are giving food manufacturers access to fruit that contains wild berries foraged from the forests of Latvia.
Set to launch this autumn, Puratos' s Topfil fruit pieces and Vivafil fruit pureés aim to target high-end patisseries and bakers.

Both products are freeze-thaw stable and bake-stable and can be used in cold or baked applications.

Vivafil fruit fillings can be used in fresh and frozen applications to fill laminated doughs, cakes, sweet bakery products and biscuits with a shelf-life of up to six weeks.

Topfil fillings are ready to use in fresh and frozen applications with laminated doughs, cakes, sweet bakery products and pies and crumbles.

There are more than 30 varieties of fruit fillings, of which a selection will be offered to the British market.

The fruit is handpicked in the Latvian forest and made into fruit pureé at Puratos's factory.

The firm acquired the Latvia fruit factory Pure Food in early 2011 to enhance its sourcing opportunities. Since then, its range of fruit fillings have been integrated into the Puratos range.
