TIC Gums offers its TicaPAN® Quick Crunch to confectioners, with up to 10% fewer shell layers needed, the product saves time and money in panned confections like candy and gum without sacrificing quality or performance. The TicaPAN coating system was developed as a cost saving solution for the sometimes unstable gum arabic market and for strengthening sugar and sugar alcohol shells in panned confections.

Reducing the number of shells in panned confections lowers the expense of manufacture, allowing confectioners to modify existing formulations for maximum cost in use savings, achieving a similar product while using fewer raw materials.

For example, a confectioner using 400,000 pounds of gum arabic at $1.25 per pound could use 200,000 pounds of TicaPAN Quick Crunch priced at $1.35 per pound and save $230,000 a year. While TicaPAN Quick Crunch is only 1% to 3% of the entire formulation, sugar and sugar alcohols constitute 60% to 75% of the shell.

Natural sugar or artificial sweeteners, like xylitol, are more expensive and comprise a larger percentage of shell ingredients. A 10% reduction in these yields significant savings. A gum manufacturer using xylitol priced at $1.50 per pound in the same 400,000 pounds of gum arabic example, substituted TicaPAN Quick Crunch instead, a savings of $1,287,000 per year is possible.

In addition to ingredient savings, the TicaPAN Quick Crunch dries 20% faster than gum arabic, providing as much as a 20% increase in productivity. It's also stronger and whiter in color, eliminating the need for dyes or other processes that add steps, expense and time.

The TicaPAN coating system also works well for covering or enrobing nuts, chocolate candy, molt balls and other edible products with centers containing volatile oils. The company has also cautioned against gum rosin use.
