Chr. Hansen introduces natural blue color for confectionery industry

The new natural blue colorant, which is developed by the company's Natural Colors Division, is based on Spirulina, a blue-green algae which occurs naturally in tropical and subtropical lakes.

Spirulina is widely used for many applications across many markets. The compound provides bright vivid blue and green shades and can be used for various types of confectionery including panned candy, and chewy candy, jelly gum/gummy candy, extruded candy and chewing gum, the company said.

Spirulina has been approved by the US Food & Drug Administration (FDA) for use as colorant in confectionery and chewing gum in the country and the color complies with federal regulation.

Chr. Hansen Natural Colors Division US senior vice president Kurt Seagrist said that consumers have been long awaiting a natural blue and green for the confectionery industry.

"Spirulina provides a radiant blue and a foundation for natural green blends," Seagrist added.

Chr. Hansen's SweetColor product line is offered in six liquid and powder product formulas for use in confectionery and gum.
