Microwave mocha self-saucing puddings

Ingredients


• 3/4 cup self-raising flour, sifted
• 1 tablespoon cocoa powder, sifted
• 1 teaspoon instant espresso powder
• 1/2 cup caster sugar
• 60g butter, melted
• 1/2 cup milk
• Double cream, to serve
• Sauce
• 2 teaspoons cornflour
• 1 tablespoon cocoa powder, sifted
• 1 teaspoon instant espresso powder
• 1/4 cup brown sugar
• 3/4 cup boiling water

Method 

1. Combine flour, cocoa powder, espresso powder, caster sugar, butter and milk in a bowl. Stir until smooth. Spoon into four 1 1/4 cup-capacity heatproof, microwave-safe dishes.

2. Make sauce: Combine cornflour, cocoa powder, espresso powder, brown sugar and boiling water in a heatproof jug. Stir until smooth. Gently pour sauce evenly over batter in each dish.

3. Place dishes on microwave turntable. Microwave on MEDIUM-HIGH (75%) for 5 minutes or until tops are firm to touch. Stand for 1 minute. Dollop with cream. Serve.
