Ingredients
• 4 medium zucchini, halved lengthways, roughly chopped
• 1 small red onion, halved, thinly sliced
• 1 tablespoon finely grated lemon rind
• 1/4 cup lemon juice
• 1 tablespoon olive oil
• 2 tablespoons small fresh mint leaves
Method
Preheat oven to 220°C/200°C fan-forced. Place zucchini, onion, lemon rind, lemon juice and oil in a baking dish. Season with salt and pepper. Toss to combine. Roast for 18 to 20 minutes or until zucchini is tender. Top with mint leaves. Serve.
