Ingredients
• 2 teaspoons olive oil
• 4 shortcut bacon rashers
• 2 ripe avocados
• 1 tablespoon lime juice
• 100g fetta, crumbled
• 4 slices sourdough bread, toasted
• 12 semi-dried tomatoes
• Lime halves, to serve
Method
1. Heat oil in a frying pan over medium- high heat. Add bacon. Cook for 2 minutes each side or until browned and crisp. Transfer to a plate lined with paper towel.
2. Roughly mash avocado with lime juice. Add fetta. Season with salt and pepper. Gently stir until just combined.
3. Place toast on plates. Top with avocado mixture, bacon and tomato. Serve with lime.
