Ingredients
• 1/4 kent pumpkin (800g), seeds removed
• 1 tablespoon olive oil
• 1 tablespoon fresh thyme leaves
• 40g baby rocket
• 75g goat's cheese feta, crumbled
Method
Preheat oven to 220°C/200°C fan-forced. Slice pumpkin into 2.5cm wide slices. Place pumpkin, in a single layer, in a baking dish. Drizzle with oil. Sprinkle with thyme. Roast for 15 to 20 minutes or until tender. Top with rocket and feta. Serve.
