It also expands its range of natural colors with new innovative vivid products especially for the confectionery industry. To optimize the quality of its natural colors Chr. Hansen has made the extensive C*Stab-study to explore light stability of natural colors and coloring foodstuffs. 500 samples of confectionery were tested for two years to measure the light- and storage stability of the colors. In a model-supermarket, under accelerated conditions in a light cabinet and stored in darkness the company got telling information for further applications.
The innovative CapColor-products, an encapsulated type of natural colors by Chr. Hansen, are characterized by their remarkable light and heat stability.
