Move over Greek yogurt! The legendary thykk yogurt of remote Icelandic villages has taken shores by storm, earning a coveted place on Whole Foods shelves across the nation.
In Iceland, yogurt, skyr, is thick, fat-free, protein- and calcium-rich and low in sugar.
"Get the best milk. Skim the fat. Add live cultures. Let it set. Strain the liquid. When it looks really thykk, strain even more," says Smari Asmundsson, founder of Smári Organics, Petaluma, Calif.
Smári’s new line of Icelandic yogurt is said to contain more protein per serving than any other yogurt in the United States. The milk and fruit are not treated with hormones, pesticides or herbicides, and the cows are grass-fed Jerseys and Guernseys.
Smári Icelandic yogurt comes in Pure, Strawberry, Blueberry and Vanilla flavors, all made with organic fruit, vanilla extract and a touch of cane sugar.
