Lecithin specialist Lecico has announced its plans for the forthcoming Food Ingredients Asia show (Bangkok, Thailand - September 11-13).
The company says it will show its Lecico P 900, which it describes as an exceptional quality of de-oiled lecithin powder for functional foods or high quality food systems. It is said to improve the wetability and dispersibility of all instant products, and an ideal release agent and emulsifier in baked goods. It is also claimed to extend the shelf life of chewing and bubble gum, and to control crystallisation in ice cream. Lecico P 900 is a free flowing powder with a very fine particle size which is said to be very easy to dose. Its structure means that it can be easily dispersed in water or diluted in oils and fats.
Also highlighted in Bangkok will be Lecico F 600 IPM, a highly transparent, non-GMO, multifunctional premium lecithin. According to the company, Lecico F 600 IPM is suitable as an emulsifier, wetting agent, stabiliser, instantising agent, release agent, lubricant, antioxidant and dispersant.
In addition, the company is showcasing Lecico CM 500, a natural soya lecithin compound, for use in various high quality bakery products such as wafers, long-life products or baking agents. It is said to achieve optimal homogenous mass by good distribution of the ingredients with a good release effect from the wafer irons and baking trays, with baked products showing superior break-resistance and formability. According to Lecico, texture is improved and a fine uniform browning obtained.
