The polyphenols in black carrots are mainly anthocyanins, those pigments that make it purple, and phenolic acids. Such micro-nutrients have important functions in our organism. They protect from capillary leaks and have an anti-bacterial and immunostimulant action and of course they are antioxidant.
Black carrots were introduced in 2008 and cultivation areas have increased since. They are available as packed unwashed and fresh-cut (packed baby carrots or carrot shreds). The 2013 harvest started about a week ago.
