KMC develops new ingredients for processed cheese manufacturers

The new products are claimed to help manufacturers replace traditional way of using cream cheese or milk to produce a processed cream cheese product.

Using potato-based CheeseMaker SP25 and SP35, the processed cream cheese product can be made from starch, milk proteins and vegetable fat, offering a quick and cost-effective solution. In addition, the ingredients provide good stability and less textural changes upon temperature fluctuations.

The recombination process eliminates the need of filtration equipment in the production of cream cheese, which in general involves discharge of whey.

KMC dairy specialist Karen Bülow-Olsen said, "We have carried out a number of trials in which the texture of samples was tested immediately from the refrigerator and after acclimatization to room temperature.

"The samples with our CheeseMaker solutions kept the same firmness independent of the temperature, whereas the reference samples showed a clear decrease in firmness at the higher temperature."

With a neutral taste and a white color, CheeseMaker SP25 and SP35 are easy to dissolve and can be added together with the other dry ingredients.
