Ingredients
• 140g pistachios
• 1 1/2 cups icing sugar, plus extra to dust
• 1/2 cup plain flour
• 6 egg whites
• 185g butter, melted, cooled
• 1/2 mango, thinly sliced
Method
1. Preheat oven to 200°C or 180°C fan. Grease a 10-hole, 1/2 cup friand pan. Process pistachios in a small food processor until ground. Transfer to a bowl. Sift over the icing sugar and flour.
2. Use a fork to whisk egg whites in a large bowl until frothy. Add butter and pistachio mixture. Stir gently until just combined.
3. Fill prepared pans. Lay mango slices over batter and bake for 25-30 mins or until firm. Cool in pan for 5 mins, then transfer to a wire rack to cool completely. Dust with icing sugar.
