Penford Food Ingredients has launched PenNovo FR, a non-GMO, potato-based starch system that the company says can replace up to 50% of solid fat in certain applications including baked goods, confectionery bases and fillings, dairy-based desserts, frostings, sauces and spreads. Functional benefits are said to include the fact that it is non-GMO; that it has a bland taste and creamy texture; that it is fat mimetic; and that it maintains cell structure and volume.

The modified food starch is claimed to offer a host of health benefits for adults and children. It can be used for caloric and fat reduction, and is cholesterol-free. Beyond health benefits, PenNovo FR caters to consumers with food restrictions, and is gluten-free, non-allergenic, Halal and Kosher.
