Katia Bagagli from Olivieri in San Mauro Pascoli (FC) explains that celery prices are not exceptional. "We're doing better than others as demand is constant, but quotations have remained the same over the past few weeks. We specialise in celery, which is available 12 months a year."
Company clients are Italian and foreign wholesalers and the H&R industry. Compared to other products such as fennel, celery is easier to process. "There is very little waste, so processing is quick. Even if prices are not very high, waste is minimum and yields are high."
"We produce celery in three regions - Puglia, Emilia-Romagna and Abruzzo. Clients often opt for 40x60 wooden crates or single bags in cardboard crates, but we can satisfy all sorts of requests."
Katia explains that the "variety is not recent, characterised by a white colour when ripe and no filaments. It's therefore much appreciated by restaurants and consumers in general. We sell a lot of it abroad too, to France, for example."
