According to the company, it has instituted a company-wide training to inform team members of proper food handling and accommodations for gluten-free guests.
Chevys Fresh Mex president Brian Wright said that since freshness remains the center of the company's culinary focus, many of the entrees have always been naturally gluten-free.
"We aim to create exciting flavor profiles using fresh vegetables, herbs and spices, without adding unnecessary thickeners or fillers," Wright added.
Chevys' gluten-free menus are available in all 42 corporate restaurants, and locations in Sacramento and New York Times Square offer additional gluten-free menu selections.
Chevys Fresh Mex, which is owned by Real Mex Restaurants, operates 42 corporate and 18 franchised restaurants.
