Australian whiskey pioneer Bill Lark, along with the Hope family, is all set to open a new multi-million dollar whiskey distillery at Redlands Estate in the Derwent Valley, Tasmania on 28 November 2012.
The new distillery will include a gift shop, tasting room in old coach house and a visitor center, where it will conduct cellar door sales of Scottish and Tasmanian malt whiskies.
Lark was quoted by The Shout as saying that the distillery will be initially ageing its whiskies in smaller oak barrels to increase the maturation process.
"What we'll be doing is putting out some 20-litre casks and quarter casks. Those little 20-litre casks we anticipate being ready for release between the second and third year of operation," he added.
By early 2013, the distillery will roll out its first premium, single-malt whiskey under the Redlands label. The whiskey will be distilled by Lark Distillery and will be bottled by Redlands on the estate.
