Balcones Distilling, a Texas-based whiskey maker, is to expand its business in the downtown by converting Waco Fireproof Storage building into a showplace for its craft spirits.
Located at 225 S 11th Street, Waco, the building will be installed with new distilling equipment. It will beckon tourists and will sell products in a gift shop.
Balcones Distilling president and head distiller Chip Tate was quoted by WacoTrib.com as saying that the equipment will include larger stills and tanks to be created by fourth-generation still makers at Forsyths of Scotland.
The distillery currently manufactures whiskey at a 2,000ft² converted welding shop near the South 17th Street overpass and stores barrels at the 65,000ft² Fireproof Storage site.
To bring all its operations under one roof, the company is expanding the Waco Fireproof Storage site, which is expected to be complete by early 2015.
Tate said for the first time ever, they will be able to dictate their production levels based on what they want to make rather than how much they can make.
"We will never compromise quality for quantity, but this expansion will allow us to grow both," Tate added.
