Ingredients
• 200g Greek-style feta
• 250g prawns (24), cooked, peeled, tails intact
• 2 tablespoons lemon juice
• 2 tablespoons extra virgin olive oil
• 1/3 cup mint leaves, shredded
• 1/4 watermelon
Method
1. Cut rind from watermelon then cut flesh into 1cm-thick slices. Cut each slice into wedges. Cut fetta into thin slices.
2. Arrange watermelon and prawns onto entree-size plates. Crumble feta over and drizzle with lemon juice and olive oil.
3. Sprinkle with mint and season with freshly ground black pepper. Serve immediately.
