“Wild has actually developed five varieties [of strawberry flavour] for jelly gums and four varieties for [both] ice cream and milk cream fillings. In order to make this innovative flavour range possible Wild has screened varieties of raw material from different origins and has set up a strawberry panel to evaluate the right sensory profiles.”
In a statement covering the launch of the flavours range, she said: “Because consumers of different regions prefer different tastes, we have developed a selection of strawberry flavours with distinctive sensory profiles.”
Milk cream fillings
In the area of milk cream fillings, the combination of chocolate with fruity flavours was in high demand, said Wild.
Braun told FoodNavigator that strawberry was the third most popular global flavour with ice cream makers after vanilla and chocolate and the top flavour preferred for filled chocolate. “Strawberry is a very important flavour for food applications and highly accepted by consumers.”
The launch had entailed extensive work adjusting the flavour profiles to each application, she said. The new flavours build on continued strong demand for natural ingredients, said Wild.
