Finger Lakes Distilling, a New York State Farm Distillery that produces distilled spirits in small batches, is to install a new still at the facility in April or May 2013 to expand its production capacity by four times.
The new still is designed to avoid dumping of stillage or the mash left after fermentation. This allows the still to operate continuously without recharge for subsequent runs.
The distillery already has a 4,000 pound 350gal pot still made by Holstein in Markdorf, Germany, which produces around one or two barrels of whiskey when run for 15 hours a day.
However, the new still will allow the distillery to produce six to eight barrels a day.
Finger Lakes Distilling owner Brian McKenzie told theithacajournal.com that, "We don't intend on running the new equipment at full capacity right away."
The distillery plans to continue using its existing still for the production of whiskey, grappa - a grape-based vodka, a gin created with unique botanicals, brandy, and a number of fruit-based liqueurs.
