Carrots aren’t only available in the standard orange colour. They can also be red, yellow and purple with a variety of flavors. The early varieties can be sown in February and later varieties until late May.

According to the Rheinische Landwirtschafts-Verband (RLV), the farmers’ association in Rheinland, the harvest started at the beginning of July and fresh carrots can be harvested until next April.

Carrots can be harvested on demand and can be stored easily, continues the RLV. But after the harvest the field shouldn’t be used for three years for carrots or other plants of the celery, carrot or parsley family.

Carrots are cultivated on about 9,650 hectares all over Germany. Nordrhein-Westfalen is the largest cultivation area for carrots. Other important cultivation areas are Lower Saxony and Rhineland-Palatinate. 527,000 metric tons of carrots were harvested in Germany in 2015.

Carrots are low in calories and high in minerals and fibers, fibers such as pectin aid the digestion. And carrots contain vitamin A, high levels of carotene and folate, which improves and influences eyesight, lung capacity and thinking ability and memory.
