Increasing market share for brown and organic champignons in German trade

In 2018, 79,150 tons of edible mushrooms were cultivated in Germany. Of this, 76,000 tonnes were mushrooms, 69,000 tonnes for the fresh market - a new record. 3,150 t accounted for the other types, the so-called noble mushrooms. Over 95 percent of the domestically produced mushrooms are button mushrooms. Brown mushrooms are becoming increasingly popular. They are gaining an additional market share. Looking at the last four years, their share has increased from 16,000 tons to more than 26,000 tons. With regard to white mushrooms, the trend is declining slightly. (42,000 to 40,000 t) This has been determined by the Agrarmarkt Informations-Gesellschaft mbH (AMI) for the Bund Deutscher Champignon- und Kulturpilzanbauer.

Organic mushrooms are in demand. Their share is 5.5 percent, with a slight upward trend. Parallel to this, the expenses involved have developed. The share of organic mushrooms was 10 percent last year, with 90 percent being conventional mushrooms. Household mushroom spending has also risen over the past four years. For noble mushrooms, it was slightly declining. They are predominantly bought at discounters (57 percent). This peculiarity is also present in vegetables, but not so pronounced (51 percent).

Market tends towards smaller packaging units

Smaller sales packaging has become more popular. The 500 g bowls have decreased significantly. The 250 g units and also 400 g shells have been added. Their share is just over 30 percent. Loose goods became less popular. Various other packaging sizes make up the rest.
