The technology of the spray drying facility, including its dimensions and gentle process of less than 50º Celsius, allow a slow and cold drying of the puree resulting in pure 100% fruit or vegetable powders without any carriers or additives.
The powders are soluble when poured into hot or cold water. The size and shape of the powder's particles allow it to complete texture recovery without sedimentation. A comparative study showed that hot-sprayed tomato powder settled to the bottom of a container after four minutes, while the cold spray-dried powder processed at Naturex's facility showed a continued homogenous suspension in the solution.
