Tri-Nations Butchery Team on Show at Meatup

Core Tip: UK - A group of top British butchers will be sharpening their skills ahead of this year’s Tri-Nations Butchers Challenge at the national Meatup event on 30 June.
The 2015 challenge will then be hosted later in the year by current champions New Zealand, following the success of last year’s competition, which took place in the UK.

This year’s six-man team, supported by EBLEX and managed by Dalziel’s Danny Upson, has been practising hard to ensure they have the best chance of beating their Australian and New Zealand counterparts when the competition takes place this September.

Following several intense sessions working together at Leeds City College and The Scottish Meat Trades Fair, the team will be coming to Stoneleigh to showcase their skills in front of the crowds on the first day of the Meatup exhibition.

Working under the watchful eye of fellow butchers and to a strict deadline will give members of the team a further practice session and a taste of what to expect in Auckland.

Meatup’s show organiser, Emma Cash said: “We’re absolutely delighted to welcome the team to Meatup and offer them a great platform to hone their skills. Meatup offers the industry a great platform and apart from the Tri-Nations we have a range of fantastic craft competitions and free seminars over the two days.

“It’s a great opportunity for other retailers and the wider trade to come along and not only support the team but get a rare opportunity to watch the team in action. I’m confident there will be lots of ideas that others can take back to their shops, so please put the date in your diary!”

The task at hand

The team has been faced with crafting an original and creative display and turning an entire lamb, and a half side of beef, into a range of small and appealing products. During the actual contest, they will be challenged to recreate these displays in just two hours in front of a large audience.

Team GB captain, David Lishman, who has been leading the side’s preparations, said: “This year’s British team has massive enthusiasm and top-rate butchery skills. Our practice sessions have demonstrated just what a talented group we have, and boosted our confidence to push the Kiwis and Aussies hard for the title.

“Our focus so far has been on developing a theme and the various cuts to highlight exactly what we can do. With a side of beef, side of pork and a full lamb carcase, there is a considerable amount of meat to use and display. Small goods and sausage products are also an important element to the competition, enabling us to showcase the wealth of great expertise in the group.”

The team will be undertaking their Tri-Nations dress rehearsal at Meatup on 30th June where visitors can see them in action whilst attending the UK’s only national event dedicated to the meat industry. Register to attend free at www.meatup.co.uk/register.
