US bakers generate $30 billion a year, according to a new report.
Research and Markets’ Bakery Product Manufacturing report claims that the US industry comprises 2,800 commercial bakeries. A further 6,000 retail bakeries generate an additional $3 billion.
Larger firms dominate the landscape with the fifty biggest firms generating 75% or revenues.
The report notes a ‘highly fragmented’ retail bakery industry with the fifty largest firms accounting for 15% of revenue. Retail bakers typically operate just one site, the report says.
Baked breads, mainly white, wheat and rye represent 40% of commercial bakery sales. 20% of sales come from rolls, buns, muffins, bagels and croissants, 10% are from soft cakes and pies; pastries, donuts and a variety of sweet goods make up the rest.
