Guanajuato is the second biggest producer of asparagus in the country and, according to estimates, this planting season will start with delays, stated the Agricultural Food and Fisheries Information Service (SIAP) and the Ministry of Agriculture and Rural Development (Sader).

The annual asparagus export season takes place in this season, but production in 2019 has been delayed. In the third week of January of 2018 there was already a large volume of this product in Europe, but production this year is delayed due to the cold that has affected different regions of the country, including Guanajuato.

According to the database of the SIAP, in 2017 there were 3,649 hectares sowed with this vegetable, 3,581 hectares of which were harvested. The total production left more than 1,074,656 pesos.

Only the state of Sonora is above in production, since it sows 15,402 hectares per year and harvests more than 14 tons that leave it an economic income of 5,779,864 pesos per year.

Baja California ranks third with more than 3,200 hectares harvested and Baja California South ranks fourth with 2,973 hectares harvested.

According to estimates, 90% of the national production is destined for export, mainly to the United States and in a smaller proportion to Europe and Japan. The export includes two large groups of the product: fresh asparagus and processed asparagus in different presentations, packed or frozen.
